Gather all your ingredients! Ask a grown-up to help you chop the chicken and sweet potato, and grate the carrots and zucchini. This is where we hide our super veggies!

Heat the olive oil in a large skillet over medium heat. Once it's warm, add the diced chicken and cook for 3-5 minutes, stirring occasionally, until it's no longer pink.

Stir in the diced sweet potato, grated carrots, and grated zucchini. Sprinkle the taco seasoning over everything and pour in the water. Stir it all together really well!

Cover the skillet and let it simmer for 7-10 minutes, or until the sweet potato is tender and the chicken is cooked through. Stir occasionally to make sure nothing sticks. The veggies will get super soft and blend right in!

While the filling is cooking, warm your tortillas. You can do this in a dry skillet for about 30 seconds per side, in the microwave for 15-20 seconds, or quickly over a gas flame (with grown-up help!).

Now for the fun part: assembly! Spoon the chicken and veggie filling into the warm tortillas. Let everyone add their favorite toppings like shredded cheese, a dollop of sour cream or Greek yogurt, diced avocado, and a sprinkle of cilantro. Enjoy your yummy, secretly healthy tacos!
