Melt 1 tablespoon of butter in a large skillet or pan over medium heat.

Add the chopped shallot and minced garlic to the pan. Sauté for 2-3 minutes until fragrant and softened.
Add the chopped bacon to the pan and cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pan.

Add the peeled and deveined shrimp to the pan with the bacon fat.

Season the shrimp with Old Bay seasoning, garlic powder, onion powder, smoked paprika, and cayenne pepper.

Mix the shrimp and seasonings thoroughly and cook for 2-3 minutes until the shrimp turn pink and are just cooked through. Do not overcook.

Remove the cooked shrimp from the pan and set aside with the crispy bacon.

To the same pan, add the chicken broth, heavy cream, shredded cheddar cheese, grated Parmesan cheese, hot sauce, and Worcestershire sauce. Stir constantly over medium heat until the cheese is melted and the sauce is well combined and heated through, about 3-5 minutes.

Add the cooked grits to the pan with the sauce. Stir well to incorporate the grits into the sauce until thoroughly combined.

Stir in 2 tablespoons of chopped green onions into the grits mixture.

Return the reserved cooked shrimp and crispy bacon to the pan with the grits and sauce. Gently fold everything together to combine.

Serve the shrimp and grits hot, optionally garnished with additional chopped green onions.
