Peel and dice the 2 apples. In a medium pot, combine the diced apples, 1/4 cup brown sugar, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1/8 teaspoon allspice. Add 1/4 cup water and 1 tablespoon lemon juice to the pot.

Bring the apple mixture to a boil over medium-high heat, then reduce the heat to a simmer. Simmer for 5-7 minutes, stirring occasionally, until the apples are tender.

While the apples are simmering, create a cornstarch slurry: In a small bowl, whisk 1/2 tablespoon cornstarch with a splash of water (about 1 tablespoon) until smooth.

Add the cornstarch slurry to the simmering apple mixture and stir continuously until the filling thickens. Remove the pot from heat and stir in 1 teaspoon vanilla extract. Transfer the apple pie filling to a bowl and allow it to cool completely, which will take at least 30 minutes.

Once the filling is cool, preheat your oven to 375°F. Roll out your favorite pie crust dough on a lightly floured surface. Use a round cookie cutter (approximately 4 inches in diameter) to cut out circles from the dough.

If desired, use a lattice cutter roller or a knife to cut strips from the remaining dough for lattice tops for some of the hand pies.

In a separate small bowl, prepare the egg wash by whisking 1 egg with 2 tablespoons milk.

Place a spoonful of the completely cooled apple filling onto one half of each pie crust circle. Brush the edges of the pie dough with the prepared egg wash.

For some pies, create a lattice top with the prepared dough strips and place it over the filling. For others, fold the plain dough circle over the filling to create a half-moon shape, making decorative cuts on top if desired. Gently press the edges of the hand pies with a fork to seal them.

Place the assembled hand pies on a baking sheet lined with parchment paper. Brush the entire surface of each hand pie with the egg wash. Sprinkle 1 tablespoon sugar evenly over the top of the hand pies.

Bake at 375°F for 15-20 minutes, or until they are golden brown and the filling is bubbly. Let cool slightly before serving.
