In a medium bowl, combine the pork strips or diced pork with 1 tablespoon of olive oil, 2 tablespoons of cornflour, 1 teaspoon of garlic powder, 1 teaspoon of paprika, salt, and pepper. Toss until the pork is evenly coated.

Preheat your air fryer to 200°C. Place the coated pork in the air fryer basket in a single layer, ensuring not to overcrowd it. You may need to cook in batches depending on the size of your air fryer.

Air fry the pork for 10–12 minutes, shaking the basket halfway through the cooking time. Continue cooking until the pork is golden brown and has crispy edges.

While the pork is air frying, prepare the sticky sauce. In a small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of honey, 1 tablespoon of sweet chili sauce, 1 teaspoon of sesame oil, and 1 teaspoon of minced garlic.

Transfer the mixed sauce to a small pan and heat over medium-low heat for 2–3 minutes, stirring occasionally, until the sauce slightly thickens.

Once the pork is cooked, add the crispy pork directly into the thickened sauce in the pan. Toss gently until the pork is thoroughly coated and appears glossy and sticky.

Serve the crispy sticky pork immediately over a bed of cooked jasmine rice. Arrange cucumber slices or shredded carrot on the side. Optionally, add slices of avocado.

Garnish with fresh spring onion and a sprinkle of sesame seeds before serving. Enjoy!
