Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil. Add the ground beef and cook, breaking it apart with a spoon, until it is fully browned and no pink remains, about 5-7 minutes.

Carefully drain any excess fat from the cooked ground beef, leaving a small amount in the pan for flavor.

Add the diced onion and diced carrots to the pan with the beef. Sauté for 3-4 minutes, until the vegetables begin to soften.

Add the minced garlic to the pan and continue to sauté for 1 minute until fragrant.

In a small bowl, combine the soy sauce, oyster sauce, and sesame oil. Whisk thoroughly to create the sauce.

Pour the prepared sauce into the pan with the beef and vegetables. Stir well to ensure all ingredients are evenly coated.

Push the beef and vegetable mixture to one side of the pan to create an empty space.

Crack the egg directly into the empty side of the pan. Scramble the egg in the pan until cooked through, about 1-2 minutes.

Add the cooked rice to the pan with all the other ingredients. Stir everything together, breaking up the rice and mixing it evenly with the beef, vegetables, and egg. Continue to cook for 3-5 minutes, allowing the rice to heat through and slightly crisp.

Add about two-thirds of the chopped green onions to the fried rice mixture in the pan. Stir once more to incorporate the green onions.

Serve the fried rice immediately in bowls and garnish with the remaining chopped green onions.
