Prepare the ingredients: Cut the 1 pound beef into small, bite-sized pieces. Mince the 4 cloves of garlic, mince the 2-inch piece of ginger, and dice the 1/2 onion.

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil. Once hot, add the beef pieces and sear until deeply browned on all sides. Do this in batches if necessary to avoid overcrowding the pan, which can steam the beef instead of searing it.

Remove the browned beef from the pan and set it aside. Leave any rendered fat or oil in the pan.

To the same pan, add the minced garlic, minced ginger, and diced onion. Sauté over medium heat, stirring frequently, until the onion softens and becomes translucent, and the aromatics are fragrant, about 3-5 minutes.

Add the gochujang, soy sauce, rice vinegar, honey, sesame oil, brown sugar, and water to the pan. Stir well to combine all ingredients, scraping up any browned bits from the bottom of the pan.

Bring the sauce mixture to a gentle simmer, then reduce the heat to low. Return the seared beef back into the pan with the sauce.

Continue to simmer the beef in the sauce for 5-7 minutes, stirring occasionally, until the sauce thickens to your desired consistency and coats the beef beautifully.

Serve the Korean Beef Gochujang Sauce hot, ideally with steamed rice and your favorite stir-fried or blanched vegetables.
