Preheat the oven to 375°F.

In a 9x9 inch baking dish, combine the white long grain rice, red enchilada sauce, Rotel, 1 cup of chicken broth, and butter. Stir all ingredients thoroughly until well combined.

Cover the baking dish tightly with aluminum foil.

Transfer the covered baking dish to the preheated oven and bake for 30 minutes.

After 30 minutes, carefully remove the foil. Check the rice for tenderness and give it a good stir. If the rice is too dry and not yet cooked to your desired tenderness, add more chicken broth (up to an additional 1 cup) and return the dish to the oven, uncovered, for another 10 minutes.

Once the rice is cooked, evenly top the entire dish with the shredded Colby jack cheese or cheddar cheese.

Return the baking dish to the oven and continue baking for another 10 minutes, or until the cheese is completely melted and bubbly.
