Place the 500g lamb mince into a large mixing bowl.

Grate the 1 red onion, 3 garlic cloves, and 1 inch ginger directly into the bowl with the lamb mince.

Finely chop the 2 green chillies and 20g coriander, then add them to the bowl.

Add 1 teaspoon ground cumin, 1 teaspoon ground coriander, 1 teaspoon garam masala, 1/2 teaspoon chilli powder (or to taste), and 1 teaspoon salt (or to taste) to the mixture.

Using your hands, thoroughly mix all the ingredients together until well combined and uniform.

Take one small tortilla. Take a portion of the prepared kebab mince mixture and spread a thin, even layer over one entire side of the tortilla, extending to the edges.

Heat a non-stick pan over medium heat.

Carefully place the tortilla, meat-side down, onto the hot pan. Cook the meat side for no more than 4 minutes, or until the meat is browned and cooked through.

Flip the tortilla to cook the other side. Cook the tortilla side for 2 minutes, or until it is lightly browned and crispy.

Remove the cooked smashed kebab taco from the pan. Repeat steps 6-9 for the remaining tortillas and mince mixture. (This assumes 8 tortillas, cooking in batches of 2-3 depending on pan size, for a total of approximately 8-12 minutes of cooking per batch, or 16-24 minutes total for 4 servings).

Serve the hot smashed kebab tacos immediately with coriander sauce and a side of salad.
