Lay one large flour tortilla flat on a clean surface. Evenly spread 1/4 of the ground chicken mince across one half of the tortilla, almost to the edges. Repeat with the remaining tortillas and chicken.

Season the chicken mince on each tortilla with salt and black pepper. Sprinkle about 2 tablespoons of breadcrumbs generously over the seasoned chicken mince, pressing them down lightly to adhere.

Heat 1 tablespoon of olive oil in a large non-stick pan or skillet over medium heat. Once hot, carefully place two tortillas into the pan, chicken-side down. Cook for 5-7 minutes, or until the chicken is fully cooked through and the breadcrumbs are golden brown and crispy.

Flip the tortillas so the cooked chicken side is now facing up. Spread 1/4 cup of marinara sauce over the cooked chicken on each tortilla. Sprinkle about 1/4 cup of shredded mozzarella cheese over the sauce on each.

Cover the pan with a lid and cook for 3-4 minutes, or until the cheese is melted and bubbly. Remove the two cooked tortillas from the pan and set aside. Repeat steps 3-5 with the remaining two tortillas, adding the remaining 1 tablespoon of olive oil to the pan if needed.

Once all tortillas are cooked, arrange 1/2 cup of warm cooked French fries on top of the melted cheese on each tortilla. Grate about 1 tablespoon of fresh Parmesan cheese over the French fries on each.

Carefully roll each tortilla into a tight wrap. Cut each wrap in half diagonally and serve immediately, with extra grated Parmesan cheese on the side if desired.
