In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, 1/2 teaspoon salt, ground cinnamon, and ground nutmeg. Whisk these dry ingredients together until well combined.

In a separate medium bowl or large measuring cup, whisk together the milk, eggs, 1 teaspoon vanilla extract, melted butter, and applesauce until smooth.

Pour the wet ingredient mixture into the dry ingredients. Mix with a spatula or spoon until just combined. The batter will be thick and lumpy; do not overmix.

Add the diced fresh apples to the batter. Gently fold them in until they are evenly distributed throughout the batter.

Heat the vegetable oil in a deep pot or Dutch oven over medium-high heat until it reaches 365°F. Use a deep-fry thermometer to monitor the temperature. Do not overcrowd the pot.

Using an ice cream scoop or two spoons, carefully drop portions of the apple batter into the hot oil. Fry 3-4 fritters at a time, depending on the size of your pot, for 3-5 minutes per side, or until they are golden brown, puffed, and cooked through. The internal temperature should reach 200°F.

Remove the fried fritters from the oil using a slotted spoon and place them on a wire rack set over a baking sheet to drain any excess oil. Allow them to cool slightly while you prepare the glaze.

In a clean bowl, combine the powdered sugar, 2 tablespoons milk, 1/8 teaspoon salt, and 1/2 teaspoon vanilla extract. Whisk until a smooth, pourable glaze is formed. If the glaze is too thick, add more milk 1/2 teaspoon at a time until desired consistency is reached.

While the fritters are still warm, douse them generously in the prepared powdered sugar glaze. You can dip them, drizzle them, or spoon the glaze over them. Place them back on the wire rack to allow the glaze to set slightly.

Serve the apple fritters warm and enjoy the soft, chewy inside with crisp, glazed edges!
