In a large bowl, combine the Chinese BBQ seasoning, char siu sauce, water, chicken powder, garlic salt, onion powder, black pepper, honey, and optional gochugaru chili oil. Whisk until well combined to create the marinade.

Add the chicken wings to the marinade, ensuring all wings are thoroughly coated. Cover the bowl and refrigerate to marinate overnight for optimal flavor, or for at least 4 hours.

Preheat your smoker to a temperature between 250°F and 275°F. Remove the chicken wings from the marinade, reserving the leftover marinade for the glaze.

Arrange the marinated chicken wings in a single layer on the smoker grates. Smoke the wings for approximately 1 to 2 hours, or until the internal temperature reaches at least 180°F to 190°F for better skin and fat rendering.

While the wings are smoking, pour the reserved marinade into a small saucepan. Bring the marinade to a boil over medium heat, then reduce the heat and simmer, stirring occasionally, until it thickens into a glaze. This should take about 10-15 minutes.

During the last 15-20 minutes of smoking, generously brush both sides of the chicken wings with the prepared char siu glaze.

For extra crispy skin, transfer the smoked wings to an air fryer preheated to 400°F. Air fry for 5 to 10 minutes, or until desired crispiness is achieved. Serve immediately.
