In a small bowl, whisk together the gochujang, soy sauce, sesame oil, and sugar for the sauce. Set aside.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced Spam and cook until golden brown and slightly crispy, about 5-7 minutes. Remove Spam from skillet and set aside.
Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the chopped yellow onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
Add the chopped kimchi and kimchi juice to the skillet. Cook for 3-5 minutes, stirring occasionally, until the kimchi is heated through and slightly softened. Add the corn and peas and cook for an additional 1-2 minutes, stirring, until heated through.
Add the cooked rice and the cooked Spam to the skillet. Stir well to combine everything.
Pour the prepared sauce over the rice mixture. Stir continuously to coat the rice evenly and cook for another 5-7 minutes, allowing the flavors to meld and the rice to become slightly crispy.
Stir in half of the sliced scallions. Taste and adjust seasoning if needed.
Divide the fried rice among four bowls. Top each bowl with a fried egg (if using) and the remaining sliced scallions. Sprinkle with toasted sesame seeds, if desired.
