Bring a pot of water to a rolling boil. Add the fresh wheat noodles and cook for 2-3 minutes, or until they are almost cooked through but still have a slight bite.

Immediately remove the noodles from the boiling water and transfer them to a bowl of cold water (or run under cold water) for 30 seconds to stop the cooking process.

Drain the noodles thoroughly and set them aside.

Heat a large pan or wok over medium heat. Add the 1/3 cup of oil.

Add the sliced onions or shallots to the hot oil and fry for 3-5 minutes, stirring occasionally, until they are golden brown and fragrant.

Increase the heat to high.

Add the cooked and drained noodles to the pan along with the dark soy, light soy sauce, salt, ground white pepper (to taste), sugar, and chicken bouillon powder.

Stir-fry vigorously for 3-5 minutes, ensuring all the noodles are thoroughly coated with the sauce and heated through.

Optional: For a complete meal, you can add cooked protein such as chicken, beef, or prawns during the last few minutes of stir-frying. If vegetarian, add scrambled eggs or fried tofu.
