Press the block of firm tofu to remove excess water. This can be done by wrapping the tofu in paper towels or a clean kitchen towel and placing a heavy object on top for at least 15-20 minutes.

Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.

In a large mixing bowl, combine the pressed firm tofu, 1/2 cup (60 g) flour, 1 teaspoon (5 g) baking powder, and 1/2 teaspoon (2 g) salt.

Knead the mixture with your hands until a soft, cohesive dough forms. It should be pliable and not too sticky.

Divide the dough into 4 equal pieces.

Take each piece of dough and roll it into a ball, then flatten it into a disk shape. Create a hole in the center of each disk to form a bagel shape. You can use your finger or the end of a wooden spoon to make the hole.

Place the shaped bagels on the prepared baking sheet.

If desired, sprinkle everything bagel seasoning generously over the top of each bagel.

Bake the bagels in the preheated oven for 25-30 minutes, or until they are golden brown and firm to the touch.

Once baked, remove the bagels from the oven and let them cool slightly on the baking sheet or a wire rack.

Serve the tofu bagels sliced, and optionally top with cream cheese and fresh chives.
