Heat 1 tablespoon of avocado oil in a large cast-iron skillet or non-stick pan over medium-high heat. Add the diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until tender and lightly browned. Remove from the skillet and set aside.

Add the remaining 1 tablespoon of avocado oil to the same skillet. Add the diced red onion and bell pepper and cook for 5-7 minutes, until softened.

Add the Erewhon Organic Grass-Fed Ground Beef to the skillet with the vegetables. Break up the meat with a spoon and cook until browned, about 5-7 minutes. Drain any excess fat.

Stir in the pink Himalayan salt, black pepper, organic garlic powder, organic paprika, and organic chili powder. Cook for 1 minute more, stirring to combine the spices with the beef.

Return the cooked sweet potatoes to the skillet. Add the organic baby spinach and cook until wilted, about 2-3 minutes. Stir everything together until well combined.
