Slice the beef sirloin or flank steak into thin strips. Prepare the bell peppers and onion by slicing them.

Add the sliced beef, sliced bell peppers (red, green, and yellow), and sliced small onion to the slow cooker.

In a separate bowl, whisk together the beef broth, soy sauce, brown sugar, garlic powder, and black pepper until well combined.

Pour the prepared sauce mixture over the beef and vegetables in the slow cooker. Cover the slow cooker.

Cook on the low setting for 6 hours.

After 6 hours, in a small bowl, mix the cornstarch with 1 tablespoon of water to create a smooth slurry. Stir this cornstarch slurry into the sauce in the slow cooker.
Continue to cook for 10 more minutes, or until the sauce has thickened to your desired consistency.
