Stir in the 1 cup of orzo, 1 (14.5 ounce) can of diced tomatoes (undrained), and 2 cups of chicken broth into the pot. Bring the mixture to a gentle simmer, stirring to combine all ingredients.

Carefully return the seared chicken breasts to the pot, nestling them into the orzo mixture. Cover the pot with a lid and reduce the heat to medium-low. Cook for 15 to 20 minutes, or until the orzo is tender and the chicken is cooked through, reaching an internal temperature of 165°F. You may need to stir gently once or twice to prevent the orzo from sticking.

Remove the pot from the heat. Stir in the 1/2 cup of mozzarella balls and 1 cup of halved cherry tomatoes. The residual heat will gently warm the mozzarella and tomatoes. Garnish the dish generously with fresh basil before serving.
