Place a large Dutch oven or heavy-bottomed pot over medium-high heat. Drizzle in the olive oil.

Add the chopped potatoes and sliced smoked sausage to the pot. Cook for 5-7 minutes, stirring occasionally, until the sausage begins to brown and the potatoes start to soften slightly.

Add the chopped yellow onion and bell peppers to the pot. Continue to cook for another 5 minutes, stirring occasionally, until the vegetables begin to soften.
