Preheat your oven to 400°F. Line a large baking sheet with parchment paper.

In a large bowl, combine the ground beef, shaved white onion, shaved red bell pepper, chopped parsley, tomato paste, garlic paste, Sazon seasoning, paprika, chili powder, salt, black pepper, and olive oil. Mix all ingredients thoroughly with your hands until well combined.

Spread the kefta mixture evenly onto the prepared baking sheet. Ensure it forms a relatively thin, even layer for optimal crisping.

Bake the kefta mixture in the preheated oven for 20 minutes, or until it is nicely browned and crispy.

While the kefta is baking, prepare the sauce. In a medium bowl, combine the mayonnaise, plain Greek yogurt, tahini, garlic paste, lemon zest, lemon juice, and black pepper. Mix until all ingredients are well combined and the sauce is smooth.

Next, prepare the salad. In another bowl, combine the sliced Roma tomatoes, sliced English cucumber, sliced red onion, chopped parsley, olive oil, lemon juice, and salt. Toss gently to combine.

Once the kefta is cooked, remove it from the oven.

To assemble the wraps, take one thin Middle Eastern pita bread. Spread a generous amount of the prepared sauce onto the pita. Add a good amount of the cooked kefta mixture over the sauce. Top the kefta with a portion of the fresh salad.

Roll up the pita nice and tight to form a wrap. Repeat with the remaining pita breads and fillings. Serve immediately and enjoy your crispy sheet pan beef kefta wraps!
