In a medium saucepan or pot with a tight-fitting lid, heat the vegetable oil and 4 tablespoons of unsalted butter over medium heat until the butter is melted.

Add the minced garlic to the pot and sauté for 1 minute, until fragrant. Be careful not to burn the garlic.

Add the rinsed rice and salt to the pot. Stir well to coat the rice grains with the garlic butter mixture.

Toast the rice for 3 to 5 minutes, stirring occasionally, until the edges of the grains become translucent.

Pour in the chicken or vegetable stock. Bring the mixture to a rolling boil.

Once boiling, reduce the heat to low, cover the pot tightly with a lid, and simmer for 15-18 minutes, or until all the liquid has been absorbed and the rice is tender.

Remove the pot from the heat and let it rest, covered, for 5 minutes. Do not lift the lid during this time.

Uncover the pot. Add the remaining 2 tablespoons of unsalted butter and the chopped green onions to the rice.

Fluff the rice gently with a fork, incorporating the butter and green onions until evenly distributed.

Serve immediately as a flavorful side dish.
