Place the pizza dough on a clean, lightly floured surface. Using a bench scraper or knife, divide the dough into 12 equal pieces.

Generously spray each cup of a standard 12-cup muffin pan with nonstick cooking spray.

Place one piece of the divided pizza dough into each muffin cup. Gently press the dough down with your fingers to form a small crust base that lines the bottom and slightly up the sides of the cup.

Spoon about 1 tablespoon of pizza sauce into each dough-lined muffin cup, spreading it evenly over the dough.

If using, sprinkle a small amount of grated Pecorino Romano cheese over the pizza sauce in each cup.

Place a layer of pepperoni slices on top of the sauce and Pecorino Romano (if used).

Add a generous amount of shredded low moisture mozzarella cheese to each cup, covering the pepperoni.

Place a few more pepperoni slices on top of the mozzarella cheese for a final layer.

Preheat your oven to 500°F.

Bake the pizza bites in the preheated oven for 12 to 15 minutes, or until the cheese is bubbly and golden brown, and the pepperoni is crispy. The edges of the dough should also be nicely browned and crispy.

Once baked, remove the muffin pan from the oven. Carefully use a knife to loosen and release the edges of each pizza bite from the muffin cup.

Gently remove the pizza bites from the pan.

If desired, drizzle the finished pizza bites with hot honey or chili oil for an added sweet and spicy kick.

Serve immediately and enjoy the crispy, cheesy pizza bites.
