In the bowl of a food processor, combine the crumbled feta cheese, softened cream cheese, extra virgin olive oil, fresh lemon juice, and minced garlic.

Process the mixture on high speed, scraping down the sides as needed, until it is completely smooth and creamy. This may take 2-3 minutes.
Add the 2 tablespoons of honey to the whipped feta mixture and pulse a few times to incorporate. Taste and adjust seasoning if desired, though feta is typically salty enough.

Transfer the whipped feta dip to a shallow serving bowl or plate. Use the back of a spoon to create a nice swirl or well in the center.

Drizzle generously with additional honey over the top of the dip. Sprinkle with the roughly chopped pistachios and the optional fresh mint.

Serve immediately with toasted pita bread, fresh vegetables, or crackers. The dip can also be made ahead and refrigerated for up to 3 days; let it come to room temperature for 15-20 minutes before serving for best texture.
