Open the package of tofu, drain the excess water, and gently press the extra liquid out of the tofu using paper towels or a tofu press.

Cut the pressed tofu into small to medium-sized cubes. Transfer the tofu cubes to a container, dust the cornstarch over the tofu, close the container, and shake it vigorously until the tofu is fully coated in the cornstarch.

Drizzle a generous amount of olive oil into a large skillet or pan and heat over medium heat. Once hot, transfer the cornstarch-coated tofu to the pan. Cook the tofu, stirring constantly to prevent sticking, and flipping throughout, until each side is golden brown and crispy. This should take about 10-12 minutes.

While the tofu is cooking, prepare the sticky sauce. In a small bowl or blender, whisk together the soy sauce (or coconut aminos), maple syrup, sesame oil, rice vinegar, minced garlic, and grated ginger until well combined.

Once the tofu is nice and crispy, pour the prepared sticky sauce over the tofu in the pan. Continue to cook for several minutes, stirring occasionally, until the sauce thickens significantly and coats the tofu. Remove from heat, reserving any leftover sauce for serving.

Assemble your bowls by adding a base of cooked rice. Top with the sticky tofu, steamed edamame, and slices of fresh avocado. Garnish with optional sesame seeds and sliced spring onions. Drizzle generously with any remaining sticky sauce before serving. Enjoy!
