Pre-heat the oven to 180 C (350 F). Line a baking sheet with parchment paper.

In a large bowl, combine the self-raising flour, Greek yoghurt, and baking powder. If using plain yoghurt, you can also add 1 teaspoon of vanilla extract at this stage. Mix the ingredients together using a spatula or spoon until a shaggy dough forms, then knead by hand for a few minutes until it forms a smooth, cohesive ball.

Lightly flour a clean work surface. Transfer the dough onto the floured surface and use a rolling pin to roll it out into a large rectangular shape, approximately 1/4 inch thick.

In a small bowl, combine the softened butter, sweetener, and cinnamon for the filling. Mix until a smooth paste is formed. Spread this paste evenly over the entire surface of the rolled-out dough rectangle.

Cut the dough into strips that are 2-3 cm (approximately 1 inch) wide. Individually roll up each strip to form the cinnamon rolls. Alternatively, you can roll the entire dough rectangle into one large log, then slice it into individual rolls using a sharp knife or a piece of string.

Place the rolled cinnamon rolls onto the prepared baking sheet, leaving a small space between each roll. Bake for 18-22 minutes, or until golden brown and cooked through.

While the cinnamon rolls are baking or cooling slightly, prepare the frosting. In a small bowl, combine the softened butter, light cream cheese, and sweetener. Mix with a spoon or whisk until the frosting is smooth and creamy.

Once the cinnamon rolls have cooled slightly (they should still be warm), spread the cream cheese frosting generously over the tops of the rolls. Serve warm and enjoy!
