Pat the chicken thighs dry with paper towels. Season both sides generously with 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon paprika, 1 teaspoon garlic powder, 1 teaspoon creole seasoning, and 1 teaspoon Old Bay seasoning. Ensure the seasonings are evenly distributed.

Break the spaghetti noodles in half and add them directly into the simmering sauce. Stir to ensure the noodles are fully submerged in the liquid. If needed, add a splash more chicken broth or water to cover the noodles.

Cover the pan with a lid and cook for 8-10 minutes, or until the spaghetti noodles are al dente, stirring occasionally to prevent sticking. The noodles will absorb the sauce as they cook.

Remove the lid. Stir in 1/4 cup of grated Parmesan cheese and 2 tablespoons of fresh chopped parsley. Continue stirring until the cheese is melted and well combined with the sauce and noodles. If the sauce is too thick, add a tablespoon or two of hot water or chicken broth.

Serve the Creole Garlic Chicken Spaghetti immediately, topping each serving with a cooked chicken thigh. Garnish with additional fresh parsley if desired.
