Take one small croissant and place it on a cutting board. Using a serrated knife, carefully slice the croissant horizontally, almost completely through, leaving one side attached to create a hinge.

Open the sliced croissant. Spoon about 1 tablespoon of raspberry jam onto the bottom half of the croissant and spread it evenly.

Place 2 ounces of sliced turkey over the raspberry jam.

Arrange 1 ounce of sliced brie cheese over the turkey.

Preheat your waffle press. Once hot, spray the waffle press with non-stick spray.

Place one filled croissant onto the preheated waffle press. Close the lid and press the sandwich until it is golden brown, crispy, and the brie is melty, typically 2-3 minutes depending on your waffle press.

Carefully remove the cooked croissant waffle from the press. Repeat for the remaining croissant sandwiches.

Sprinkle each cooked croissant waffle with additional fresh thyme leaves and flakey sea salt before serving. Enjoy warm!
