Preheat your oven to 400°F. Line a large baking sheet with parchment paper.

Lightly flour your work surface. Unroll or carefully lay out the sheet of puff pastry. Using a sharp knife or pizza cutter, cut the puff pastry into long, rectangular strips, approximately 2 inches wide.

Take one strip of puff pastry. Using a pastry brush, lightly coat one side of the strip with water. Sprinkle granulated sugar evenly over the wet surface.

Fold the sugared strip of puff pastry in half lengthwise, ensuring the sugared side is now on the inside. Gently press to seal.

Repeat the brushing and sugaring process on the top of the folded pastry. Fold it over itself again. Continue this process, alternating water, sugar, and folding, until you have completed a total of six layers for each strip. This will create a thick, multi-layered strip.

Once the layering is complete for all strips, cut each long, layered strip into smaller pieces, approximately 1/2 to 3/4 inch wide. Ensure the cut pieces display the visible layers.

Arrange the cut puff pastry pieces on the prepared baking sheet, leaving about 1 inch of space between them. Make sure the laminated (layered) sides are visible and facing upwards.

Bake for 12 to 15 minutes, or until the cookies are puffed up, golden brown, and caramelized. Keep a close eye on them as sugar can burn quickly. The exact baking time may vary depending on your oven.
