If using dried shiitake mushrooms, rehydrate them by soaking in hot water for at least 20 minutes, or until soft. Squeeze out excess water and finely dice.

Transfer the pork mixture to a shallow, heatproof dish (such as a pie plate or a deep dinner plate). Press the mixture down evenly to form a flat patty, about 3/4 to 1 inch thick.

Prepare your steamer. Fill a wok or large pot with about 2-3 inches of water and bring it to a rolling boil over high heat. Place a steaming rack in the pot.

Carefully place the dish with the pork patty onto the steaming rack. Cover the steamer tightly and steam for 20-25 minutes, or until the pork is cooked through and no longer pink in the center. The cooking time may vary depending on the thickness of your patty.

Once cooked, carefully remove the dish from the steamer. Garnish with additional sliced green onions.

Serve hot with steamed rice. For an optional serving sauce, drizzle a little extra light soy sauce and sesame oil over the patty before serving.
