Add the remaining oil (from the 1/2 tablespoon total) to the same wok or pan over high heat. Add the 5 minced garlic cloves, 2 teaspoons ginger paste, and the whites of the 3 spring onions. Stir-fry for 1 minute until fragrant.

Add the 4 cups of 'day old' jasmine rice to the wok. Break up any clumps with your spatula and stir-fry for 1–2 minutes until the rice is hot and slightly toasted. Add the blanched broccoli and the prepared sauce to the wok. Stir-fry for another 1–2 minutes, ensuring all ingredients are well coated with the sauce.

Return the cooked beef to the pan and toss everything together until the beef is heated through. Stir in the green parts of the 3 spring onions. Serve hot.

Top each serving of fried rice with a fried egg, a drizzle of chilli oil, and a sprinkle of sesame seeds.
