Take 3 pieces of chicken chops and tenderize them using a meat mallet until they are of even thickness.

In a bowl with the tenderized chicken, add 2 tablespoons of light soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of chopped garlic, 4 to 6 slices of ginger, and 1/2 teaspoon of black pepper. Mix these ingredients thoroughly by hand until the chicken is well coated.

Sprinkle a generous amount of cornstarch (about 1/2 cup) over the marinated chicken and mix well until each piece is fully coated. Ensure there are no dry spots.

Heat a large pan with about 1/4 inch of oil over medium-high heat. Once the oil is hot, carefully place the coated chicken pieces in the pan. Pan-fry for 5-7 minutes per side, or until they are golden brown and crispy on both sides and cooked through. Remove the cooked chicken from the pan and set aside on a wire rack to drain any excess oil.

In the same pan (or a clean one if preferred), melt 2 tablespoons of unsalted butter over medium heat.

Add 1 tablespoon of chopped garlic to the melted butter and sauté briefly for about 30 seconds until fragrant. Then, add 3 tablespoons of honey and 2 tablespoons of light soy sauce.

Mix all the sauce ingredients well and let the sauce simmer for 2-3 minutes until it thickens slightly and becomes bubbly.

Return the pan-fried chicken pieces to the pan with the simmering sauce. Toss and coat the chicken thoroughly with the rich honey butter glaze until each piece is evenly covered.

Transfer the Crispy Honey Butter Chicken to a plate, ideally served immediately with steamed rice. Garnish with chopped spring onions, as needed, before serving.
