In a large mixing bowl, combine the homemade garlic or shallot oil, sesame oil, light soy sauce, sweet soy sauce, dark thick caramel cooking sauce, and white or black pepper. Whisk all the ingredients together thoroughly until well combined.

Bring a large pot of water to a rolling boil. Add the egg noodles and cook according to the package instructions until al dente. This usually takes about 3-5 minutes depending on the noodle type.

Once the noodles are cooked, drain them very well using a colander. Ensure as much water as possible is removed.

Immediately add the hot, drained noodles to the large bowl containing the prepared sauce. Toss the noodles thoroughly using tongs or a large spoon until every strand is evenly coated with the sauce.

Taste the noodles and adjust the seasoning if necessary. You can add more light soy sauce for saltiness, sweet soy sauce for sweetness, or pepper for spice, according to your preference.

Divide the sauced noodles among four serving bowls. Garnish each serving generously with fried onions and finely sliced spring onions. Serve immediately while hot.
