In a large bowl, combine the ground pork, minced ginger, minced garlic, thinly sliced green onions, 1 1/2 tablespoons soy sauce, 1 tablespoon sesame oil, Celtic salt, and pepper.

Mix the pork mixture thoroughly with your hands until all ingredients are well combined.

Divide the seasoned pork mixture into 4 equal portions.

Take one portion of the pork mixture and press it evenly onto one side of a medium flour tortilla, extending the pork to the edges.

Repeat this process for the remaining 3 tortillas and pork portions.

Heat a large frying pan or griddle over medium heat. Add a small amount of avocado oil to coat the pan.

Carefully place a tortilla, meat-side down, into the hot pan. Cook for 3 to 4 minutes, or until the pork is cooked through and browned, and the tortilla edges are slightly crispy.

Flip the tortilla and cook for another 1 minute, or until the tortilla is golden brown and crispy.

While the tacos are cooking, prepare the sauce. In a medium-sized bowl, whisk together 3 tablespoons soy sauce, rice vinegar, chili oil, toasted sesame oil, coconut sugar, chili flakes, and the juice from 1/2 lime. Set aside.

Remove cooked tacos from the pan and repeat steps 7 and 8 for the remaining tacos. You may need to cook them in batches.

Once all tacos are cooked, garnish them with thinly sliced cucumbers, thinly sliced cabbage, thinly sliced carrots, fresh cilantro, and fresh chives.

Drizzle the prepared sauce over the tacos or serve it on the side for dipping. Enjoy immediately!
