Add a generous drizzle of olive oil to a large pot or Dutch oven.

Add the whole crushed garlic bulb (unpeeled), chilli flakes, and the full punnet of cherry tomatoes to the pot.

Pour in the passata. Then add the dried pasta (e.g., spaghetti). Pour in 1.1 liters of chicken stock. Ensure the total fluid (passata + stock) is approximately 1.4 liters for 400g of pasta (maintaining the 100g pasta to 350ml fluid ratio). Keep an additional 100-200 ml of extra chicken stock aside in case the liquid dries out before the pasta is cooked.

Bring the mixture to a simmer over medium-high heat.

Once simmering, cover the pot with a lid and continue to simmer for 5 minutes.

After 5 minutes, remove the lid and give the pasta a good stir to prevent it from sticking together. If the liquid seems to be drying out too quickly, add a splash of the reserved chicken stock.

Add the chicken breast pieces to the pot and stir everything together.

Re-cover the pot and continue cooking for another 5-7 minutes, or until the pasta is al dente and the chicken is cooked through. Stir occasionally and add more reserved stock if needed.

Once cooked, remove the pot from the heat.

Add a generous amount of grated Parmesan cheese, fresh basil leaves, salt, and pepper to taste. Stir everything thoroughly until the sauce becomes creamy and well combined. The residual heat will melt the Parmesan.
