Take 2 packs of enoki mushrooms. Cut off the root ends of the enoki mushrooms. Separate the enoki mushrooms into smaller, individual clusters.

In a medium-sized bowl, combine the dry ingredients: 1/2 cup (60 g) all-purpose flour, 1/4 cup (30 g) cornstarch, 1/2 teaspoon baking powder, 1/2 teaspoon salt, 1/4 teaspoon white pepper, and 1 teaspoon paprika. Whisk the dry ingredients together until well combined.

Gradually add 1/2 cup (120 ml) cold water (or as needed) to the dry mixture while continuously whisking to form a smooth batter.

Fry the enoki mushrooms until they are golden brown and crispy. Flip the mushrooms to ensure even cooking and browning on all sides. Once golden and crispy, remove the fried enoki mushrooms from the oil and place them on a wire rack to drain excess oil.

In a small bowl, combine 3 tablespoons mayonnaise, 1 to 2 teaspoons chili sauce, 1 teaspoon lime juice, and a pinch of salt. Mix all the ingredients thoroughly until well combined and smooth.

Serve the crispy fried enoki mushrooms immediately with the prepared spicy mayo for dipping.
