Add the pork ribs and chicken to a large pot. Pour in the water, salt, and sugar. Bring the mixture to a boil over high heat.

Once boiling, reduce the heat to low and let it simmer for 1 1/2 hours. This will create a rich broth.

After simmering, carefully remove the pork and chicken from the broth. Shred or cut the meat into bite-sized pieces and set aside.

In a bowl, combine the pork belly and shrimp. Add the turmeric powder, annatto oil, fish sauce, black pepper, chili flakes, minced garlic, and minced shallots. Mix thoroughly to ensure all ingredients are well coated and marinate.

Heat a pan over medium-high heat. Add the marinated pork belly and shrimp to the hot pan. Cook until the pork belly renders some fat and the shrimp turn pink and are cooked through.

To assemble, place a generous portion of Mì Quảng noodles into each serving bowl.

Arrange the cooked pork belly, shrimp, and the shredded pork and chicken from the broth on top of the noodles.

Ladle a small amount of the prepared broth over the ingredients. Mì Quảng is traditionally served with just enough broth to coat the noodles and toppings, not to completely submerge them.

Garnish each bowl with a hard-boiled egg half, crushed peanuts, and a rice cracker. Serve immediately with fresh herbs (mint, cilantro, basil), lime wedges, fresh chili, lettuce, bean sprouts, and fried shallots on the side for individual customization.
