Preheat your oven to 400°F. Line a baking sheet with parchment paper.

In a large bowl, combine the lion's mane mushroom pieces with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss gently to ensure all mushroom pieces are evenly coated.

Spread the seasoned lion's mane mushrooms in a single layer on the prepared baking sheet. Roast for 15 minutes, flipping halfway through, until tender and slightly browned.

Remove the mushrooms from the oven. In the same bowl, add the roasted mushrooms and pour in the BBQ sauce. Toss until all the mushrooms are well coated.

Return the BBQ-coated mushrooms to the baking sheet and spread them out. Bake for another 5-7 minutes, or until the sauce is slightly caramelized and sticky.

While the mushrooms are finishing, if desired, brush the cut sides of the brioche buns with melted butter. Toast the buns in a dry pan over medium heat or under the broiler until lightly golden. Watch carefully to prevent burning.

Assemble the sandwiches by placing a generous portion of the BBQ lion's mane mushrooms on the bottom half of each toasted bun. Top with coleslaw and sliced pickles. Place the top bun on and serve immediately.
