Heat the olive oil in a large pan over medium heat.

Add the very finely chopped green cabbage and the peeled, grated, squeezed, and finely chopped carrots to the pan. Sauté until the vegetables are softened, about 5-7 minutes.

Add the pork mince to the pan with the vegetables. Cook the pork through, breaking it up very finely with a spatula as it cooks, about 8-10 minutes.

Pour in the ABC sauce and mix it well with the pork and vegetable mixture. Let the mixture simmer gently while you prepare the noodles.

Prepare the rice vermicelli noodles according to the packet instructions, typically by soaking them in hot water until tender. Drain the noodles well once prepared.

Finely chop the drained vermicelli noodles.

Add the chopped noodles into the pork mixture in the pan and mix until everything is fully combined.

Remove the mixture from the heat and transfer it to a bowl. Allow the mixture to cool completely. This can take up to an hour.

To roll the spring rolls: Lay a spring roll wrapper flat in a diamond orientation. Place a spoonful of the cooled filling mixture near the bottom corner of the wrapper. Fold the bottom corner over the filling. Fold both side corners inwards towards the center. Roll the wrapper tightly upwards from the bottom. Moisten the top corner of the wrapper with a finger dipped in water to seal the roll. Repeat for all spring rolls.

Place the rolled spring rolls onto a tray, ensuring they do not touch each other.

Freeze the spring rolls on the tray until solid.

Once frozen solid, transfer the spring rolls into freezer bags for long-term storage.

Cook the spring rolls from frozen as needed. They can be deep-fried until golden brown and crispy, or air-fried according to your appliance's instructions.

Serve the cooked spring rolls with lettuce cups, as part of a fried rice meal, in lunchboxes (they can be eaten cold), or with plain rice for fussy eaters.
