Dice 1 kg of potatoes. Cook the whisked eggs in a separate pan until they are fluffy and cooked through, resembling scrambled eggs.

To prevent the tortillas from breaking during rolling, heat each of the 10 large tortillas on a pan over low heat for 30 seconds on each side.

Lay out each warmed tortilla. Spread 25 g of sriracha mayonnaise evenly over each tortilla. Alternatively, mix 250 g of light mayonnaise with 10 g of sriracha and distribute evenly across all 10 burritos.
