Cut the watermelon into bite-sized cubes, ensuring they are roughly uniform for even freezing.

Place the cubed watermelon into a large mixing bowl. Add the juice from 1/2 lime, 1 tablespoon of honey, 1/2 teaspoon of chili powder, 1/4 teaspoon of salt, 1/4 teaspoon of Tajin, 1/4 teaspoon of black pepper, and 1 teaspoon of fresh chopped mint to the bowl with the watermelon.
