Prepare the mint syrup: In a small saucepan, combine the granulated sugar and water. Bring to a simmer over medium heat, stirring until the sugar is completely dissolved. Remove from heat.

Add the packed fresh mint leaves to the hot sugar syrup. Stir gently to submerge the mint. Let the syrup steep for at least 30 minutes, or until it has cooled completely and infused with the mint flavor. For a stronger mint flavor, you can let it steep longer.

While the syrup is steeping, prepare the honeydew melon. Cut the melon in half, scoop out the seeds, and then cut into wedges. Remove the rind and cut the melon flesh into bite-sized cubes or use a melon baller to create spheres.

Once the mint syrup has cooled and steeped, strain it through a fine-mesh sieve into a clean bowl or jar, pressing on the mint leaves to extract all the liquid. Discard the mint leaves.

Arrange the honeydew melon pieces in individual serving bowls or on a large platter. Drizzle generously with the prepared mint syrup.
