Add 400g baby potatoes to a pot of boiling water. Boil the potatoes until they are soft. Once soft, drain the water from the pot. Mash the cooked potatoes until they are smooth. Season with salt and pepper to taste. Set the mashed potatoes aside.

Slice the 4 chicken breasts into strips. Heat 2 tablespoons olive oil in a pan over medium-high heat. Add the chicken strips to the hot pan. Season the chicken with 2 tablespoons Cajun seasoning, along with salt and pepper to taste. Cook the chicken until it is browned and thoroughly cooked through. Pour 300 ml chicken stock and 200 ml single cream into the pan with the vegetables. Bring the mixture to a simmer, stirring occasionally. Allow it to simmer for 5 minutes, or until the sauce has thickened slightly.

Return the cooked chicken to the pan and stir it into the sauce, ensuring the chicken is well coated. Serve the creamy Cajun chicken mixture over the prepared mashed potatoes. Garnish with fresh parsley before serving.
