Heat the sesame oil in a large pot or Dutch oven over medium heat. Add the chili crunch and grated ginger, and sauté for 1 minute until fragrant.

Stir in the miso paste and peanut butter, cooking for another minute until well combined and aromatic.

Pour in the coconut milk, water, soy sauce, and brown sugar (or date sugar). Bring the mixture to a gentle simmer and let it cook for 3 to 5 minutes, allowing the flavors to meld. Keep warm over low heat.

While the broth simmers, cook the ramen or udon noodles according to their package instructions. If using bok choy, add it to the boiling water with the noodles during the last 2 minutes of cooking.

In a separate pan, sauté your choice of vegetables (such as broccoli, mushrooms, or corn) until tender-crisp. Alternatively, you can air fry the cubed extra-firm tofu at 375°F for 10 to 12 minutes, or until golden and slightly crispy.

To assemble, divide the cooked noodles among four serving bowls. Ladle the hot creamy miso peanut broth over the noodles.

Top each bowl with the air-fried tofu, sautéed vegetables, a squeeze of fresh lemon juice, a sprinkle of fresh cilantro, and an extra drizzle of chili crunch, as desired.
