Preheat your oven to 350°F. Lightly grease a glass baking dish (approximately 8x8 inches or similar size) with cooking spray or butter.

Place the block of Boursin cheese in the center of the prepared baking dish. Carefully crack the 8 large eggs around the cheese block, ensuring they are evenly distributed.

Bake in the preheated oven for 15 to 17 minutes, or until the egg whites are set but the yolks are still slightly runny. The cheese should be softened and beginning to melt.

Remove the baking dish from the oven. Using a fork, thoroughly mash and mix the cooked eggs and melted Boursin cheese together directly in the dish until a creamy, scrambled-egg-like consistency is achieved.

Stir in the chopped fresh chives and salt into the creamy egg and cheese mixture. Taste and adjust seasoning if necessary.
