Place the cut pork pieces into the inner pot of your rice cooker.

Add the hoisin sauce, dark caramel, honey, Shaoxing wine, malto sugar (or granulated sugar), salt, oyster sauce, red powder, and meat velvet (if using) to the pork in the rice cooker pot.

Put on gloves and thoroughly mix all the ingredients with the pork inside the rice cooker pot. Ensure the rice cooker is set to the "warm" function during mixing, as this helps the ingredients combine easily.

Once the pork is thoroughly coated with the marinade, cover the rice cooker with its lid. Set the rice cooker to cook for 40 minutes.

After the initial 40 minutes, carefully open the lid. Use tongs to flip each piece of pork to ensure even cooking and coating in the sauce.

Close the lid and continue to cook the pork for another 40 minutes.

Once the cooking cycle is complete, remove the cooked Chinese BBQ Pork pieces from the rice cooker.

Baste the cooked pork with the remaining sauce and glaze from the rice cooker pot.

Slice the Chinese BBQ Pork into desired serving pieces and serve immediately.
