Place the cubed chicken breasts in a medium bowl. Add smoked paprika, cayenne pepper, garlic powder, chicken bouillon powder, black pepper, Italian seasoning, and avocado oil. Mix well by hand until the chicken is evenly coated.

Heat a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, or until browned and cooked through. Remove the chicken from the pan and set aside.

In the same pan, reduce heat to medium and add the butter. Once melted, add the diced yellow onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another 1 minute until fragrant.

Stir in the chopped sun-dried tomatoes and tomato paste. Cook for 1-2 minutes, stirring constantly, to deepen the flavor of the tomato paste.

Pour in the pasta water and heavy cream. Add red pepper flakes, garlic powder, Italian seasoning, smoked paprika, black pepper, and salt. Bring the sauce to a gentle simmer, stirring occasionally.

Add the baby spinach to the sauce and stir until it has wilted, about 2-3 minutes.

Stir in the grated Parmesan cheese until melted and the sauce is smooth. Taste and adjust seasonings as needed.

Add the cooked pasta and the cooked chicken back into the pan with the sauce. Toss everything together until well combined and heated through.

Serve immediately, garnished with extra grated Parmesan cheese if desired.
