Cut the pork shoulder into thin, flat pieces, approximately 1/4-inch thick. This will help it cook quickly and absorb the marinade.

In a large bowl, combine the sliced pork with the granulated sugar, soy sauce, 1/4 cup fish sauce, sesame oil, black pepper, garlic powder, and onion powder. Mix thoroughly with your hands to ensure each piece of pork is evenly coated. Marinate for at least 30 minutes, or up to 2 hours for deeper flavor.

Preheat a grill or grill pan to medium-high heat. Grill the marinated pork slices for 2-4 minutes per side, or until cooked through, slightly charred, and tender. The thin slices will cook quickly.

While the pork is cooking, prepare the McRib sauce. In a small bowl, combine the BBQ sauce with 1 tablespoon of fish sauce. Stir well until fully incorporated.

Preheat your oven to 350°F (175°C) or use a toaster oven. Lightly toast the bánh mì rolls for 3-5 minutes, until they are warm and crispy on the outside but still soft inside.

To assemble the sandwiches, carefully slice each toasted bánh mì roll lengthwise, without cutting all the way through. Spread a generous layer of mayonnaise on the inside of both halves of the baguette.

Layer the grilled pork slices generously onto the bottom half of each baguette. Spoon a good amount of the prepared McRib sauce over the pork.

Top the pork and sauce with sliced sweet pickled jalapenos and fresh chopped cilantro. If using, add thinly sliced white onion.
