In a mixing bowl, combine 5 tablespoons of soy sauce, 1 tablespoon of sugar, 1 tablespoon of corn syrup, 100 ml of pear juice, 1 tablespoon of vinegar, 1/4 teaspoon of salt, 2 1/2 tablespoons of minced garlic, and a little black pepper. Mix these ingredients thoroughly until well combined. Lastly, add 1 1/2 tablespoons of sesame oil to the marinade and mix it in.

Add the 300 grams of thinly sliced beef to the prepared marinade. Massage the marinade into the beef to ensure it is fully coated. Set the marinated beef aside while you prepare the other ingredients.

Slice one onion. Slice some chives (or green onions). If desired, slice a little red chili for an added kick of heat. Place the udon noodles in warm water to loosen them; this usually takes about 5 minutes.

Heat a large pan or wok over medium-high heat. Add the marinated beef and stir-fry until it is cooked through and browned, about 5-7 minutes. Remove the beef from the pan and set aside.

Add the sliced onions and the prepared vegetables (chives and red chili, if using) to the same pan. Sauté for 2-3 minutes until the onions are softened.

Return the cooked beef to the pan. Add the loosened udon noodles and pour in about 1/4 cup of extra bulgogi sauce. Stir-fry everything together for 3-5 minutes, ensuring the noodles are well coated and have absorbed all the sweet and savory goodness from the sauce.

Drizzle the cooked Bulgogi Udon with 1 teaspoon of sesame oil and sprinkle with 1 teaspoon of sesame seeds before serving.
