In a medium bowl, combine the finely chopped prawns, shredded carrots, chopped chives, ginger paste, garlic paste, cooking wine, and dark soy sauce. Mix all ingredients thoroughly until well combined. Set aside.

Prepare your steamer. If using a multi-tiered steamer, ensure it's ready for 4 small, heat-proof glass bowls. Place 1/4 teaspoon of sesame oil in the bottom of each of the four small, clear, heat-proof glass bowls and spread it evenly.

Assemble the single-serve lasagnas: Place one square dumpling wrapper into the bottom of each prepared bowl. Scoop approximately 2 tablespoons of the prawn and chive filling onto the wrapper in each bowl, spreading it evenly.

Place a second dumpling wrapper on top of the filling in each bowl. Brush a very small amount of sesame oil (about 1/8 teaspoon) onto this wrapper. Add another scoop of approximately 2 tablespoons of the filling on top of the second wrapper in each bowl.

Place a third dumpling wrapper on top of the second layer of filling in each bowl. Carefully pour 1/4 cup of vegetable stock over the top layer of each assembled dumpling lasagna. This will ensure they are 'extra soupy' and cook through.

Carefully place the assembled bowls into your steamer. Steam for 15 minutes, or until the dumpling wrappers are translucent and the prawns are cooked through.

Once steamed, carefully remove the bowls from the steamer (they will be hot!). To serve, drizzle each single-serve dumpling lasagna with 1/2 tablespoon of rice wine vinegar, 1/2 tablespoon of soy sauce, and 1/2 tablespoon of chili oil (or to taste). Garnish generously with freshly chopped green onions.
