Place the 400g of good quality pork mince into a large bowl.

Add 1/2 teaspoon of salt, 1 tablespoon of BBQ seasoning, 1 teaspoon of garlic granules, 1 teaspoon of onion granules, and 1/2 teaspoon of black pepper to the bowl with the mince.

Mix all the ingredients well until thoroughly combined. You can use your hands for best results.

Shape the mixture into two rectangular patties, each measuring approximately 6 inches by 3 inches. Wetting your hands slightly will make this step easier and prevent sticking.

Use your finger to make four distinct indents within each meat patty. This replicates the appearance of the original shop-bought McRib.

Place the shaped patties into your air fryer basket.

Cook the patties at 200°C for 14 minutes, or until the internal temperature reaches at least 75°C (167°F).

Halfway through the cooking time (around 7 minutes), carefully open the air fryer and brush the patties generously with BBQ sauce. Close and continue cooking.

Once the patties are cooked, spread a generous amount of BBQ sauce onto the base of a toasted sub roll.

Place one cooked rib patty on top of the sauced sub roll.

Add sliced white onion and gherkins (if desired) on top of the patty.

Finish by topping with the bun lid to complete the sandwich. Serve immediately.
