In a bowl, combine 1 pound of ground chicken with 1 tablespoon of olive oil, 1 tablespoon of plain yogurt, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of smoked paprika, 1 teaspoon of cumin, 1 teaspoon of oregano, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and 1/4 teaspoon of cayenne pepper.

Mix the chicken and spice mixture until well combined. Transfer the mixture to a sheet of parchment paper and form it into a tight, compact loaf shape. Wrap the loaf tightly in the parchment paper. Place the wrapped loaf in the freezer for at least 2 hours to firm up.

Once the chicken loaf is frozen solid, remove it from the freezer and unwrap it. Using a sharp knife, thinly slice the frozen chicken into uniform pieces.

Arrange the thinly sliced chicken pieces on a baking sheet (preferably lined with parchment paper). Bake the chicken in a preheated oven.

After 15 minutes, flip the chicken slices. Continue to cook for another 10 to 15 minutes, or until the chicken is golden brown and crispy.

While the chicken is baking, prepare the tzatziki sauce. In a separate bowl, combine 1 cup of plain yogurt, 1/2 cup of grated cucumber, 1 tablespoon of chopped fresh dill, 1 teaspoon of minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix well until all ingredients are incorporated.

Serve the cooked chicken doner slices with warm flatbread, sliced tomatoes, sliced onions, sliced pickles, and a generous amount of the prepared tzatziki sauce.
